Snickerdoodles
My husband’s handwriting. I didn’t save very much of his writing; he didn’t write a lot by hand. He loved spellcheckers, for good reason. I proofread a lot of his papers for his master’s degree.
His favorite cookies, he said, were snickerdoodles, but he was not picky. Any cookie, any ice cream… when he went shopping he would come home with ice cream rather than cookies. Looking back, I didn’t make snickerdoodles nearly often enough. My preference was for peanut butter chocolate chip cookies, preferably whole wheat; it didn’t occur to me to make snickerdoodles whole wheat. I don’t think they would turn out the same.
Snickerdoodle Cookies (Smith’s Raisin Box)
1/2 cup butter
3/4 cup sugar
1 egg
1 1/3 cups flour
1/2 teaspoon baking soda
1 teaspoon cream of tartar
dash salt
1 cup raisins
rolling mixture:
1 tablespoon sugar
1 teaspoon cinnamon
Cream butter and sugar in mixing bowl. Beat in egg. Sift together flour, soda, cream of tartar and salt, add to creamed mixture. Mix in raisins. Roll in 1 inch balls. Roll in sugar-cinnamon mixture. Place 2 inches apart on ungreased baking sheet. Bake at 400 degrees F for 10-12 minutes. Makes 2 1/2 dozen.
